Marshmallow Frosted Cupcakes | Lifestyle 


“A balanced diet is having a cupcake in each hand.”

Cupcakes, to me, complete every gathering. I recently baked a decadent dozen of soft cupcakes topped with the most luxurious marshmallow fluff icing.

These cupcakes have got to be some of the best. They have just the right amount of sweetness, and the soft gooey frosting is quite literally irresistible. Go ahead and try some for yourself!

Vanilla Cupcakes with Marshmallow Icing

*Below is my fool-proof recipe for vanilla cupcakes. If you’d prefer, you can buy these ready-made. Alternatively, use a premix (the Pilsbury brand is great!)



1/2 pound butter

6 eggs

1/2 cups sugar

3 cup flour

6 teaspoons baking powder

3/4 cup milk (add a bit more in winter)

1 cup water

1 teaspoon vanilla essence


Beat butter , sugar and eggs. Slowly add in the remainder of the ingredients and beat well.


Marshmallow Fluff:

I buy a ready-made bottle of this, but you can make your own using :

2 egg whites

1 cup liquid glucose

1/4 teaspoon salt

1 cup icing sugar

1 teaspoon vanilla essence

Beat the egg whites, glucose and salt. Add in the icing sugar and beat. Lastly, add in the vanilla essence and beat.

2 egg whites

1 cup icing sugar

1/4 cup water

1/4 teaspoon cream of tartar

Pinch of salt

You can add an essence of colouring to flavour it. I used vanilla essence.

1 cup Marshmallow fluff


Beat together all ingredients except for the marshmallow fluff.

Prepare a double boiler.

Melt the marshmallow fluff and mix in the other beaten ingredients.

Mix together well over the double boiler.

Once soft, beat it all for a few minutes until peaks appear.

Decorate cupcakes as desired.
